What's the best way to keep track of all the thing you wanna do
TL;DR: Obsidian. https://obsidian.md/

I've been through quite a few options, I've tried various task tracking apps, I've tried todo.txt, I've even used pen and paper todo lists. But I keep going back to Obsidian. I found the way that works for me is to use a couple of specific plugins - Kanban and Tasks.

For my vlog, I have a Kanban board with one card for each bus route, as I check them off my list the cards move through various columns, planned, filmed, edited, and posted. I have one note per episode in the same folder. It just works.

For general tasks I shove my todos in the daily note Obsidian helpfully creates for me, and the Tasks plugin shows me a list of tasks I haven't done yet. I can add whatever info I need to that daily note and not really have to think about organising them, because when they're done, they just vanish from my Tasks list, but I can always find them again.

I use Syncthing to make sure my phone, laptop, and desktop always have the latest version of my Obsidian vault.

So, yeah, it's not perfect, it's a bit of a hodgepodge system, but it works for me. Give it a try. Best thing about Obsidian is it makes it super easy to migrate to another app if you feel like it.
